Quick Cauliflower Rice Recipe

If you’re cutting the startchy carbs in the evening and want an amazing alternative to rice then try cauliflower rice, yes you read that right. Ideal for days when you haven’t worked out and want to enjoy a lighter evening meal.

This is a great recipe but a little bit of a shock for some and initially tricky to get your head around but give it a try.

Cauliflower rice is a perfect substitute for grains, e.g couscous and rice. It’s extremely nutritious and very tasty.

Ingredients:

> Large cauliflower

> 1 tablespoon butter**

> Black pepper to taste

Instructions:

Grate the raw cauliflower using either a food processor or a hand held grater into a bowl (so it’s about the size of rice, don’t make it into a powder!)

 

> Melt the butter in a frying pan

> Add grated cauliflower

> Keep stirring so cauliflower doesn’t burn

> Cook for approx 10 minutes or until texture has softened

*Serve immediately

Serve with a chilli or home made curry because it goes lovely with all sorts of spicy dishes.

**Make sure the butter comes from grass-fed cows, this means that it comes from cows that are only fed on a diet of their mother’s milk and grass.

This makes the butter, milk and beef far more nutritious and means it doesn’t contain any nasty additives! It contains three times more omega 3 fatty acids, more beta-carotene and vitamin E. It means the cows are not mistreated to mass produce dairy products either so it makes it a more ethical choice.

So throw out the old belief that butter is bad for you because grass fed is better for you than any spread you can find.

All Jersey & Guernsey cows are grass fed but can be difficult to buy. However Kerrygold cows are also grass-fed and this can be bought in most supermarkets. If you can’t get grass fed or jersey dairy product then choose organic full fat dairy.
