In celebration of The Great British Bake Off returning to our screens, we give you our low sugar, gluten free banoffee pie which only contains all natural fats and sugars, and in moderation every once in a while will do you nothing but good.
Whether you need a desert to treat the family after dinner, got friends coming over or you need to take a fabulous looking desert for a special occasion, this is the desert recipe for you. It takes around half an hour to throw together but looks and tastes really amazing as if you’ve been cooking away in the kitchen for hours!
Prep to Plate: Approx 30 minutes
Serves: 6 (if you divide between 4 you must all do 150 burpees after tucking in!!)
Required: 8 inch deep pie dish
1.5 cups almond flour
1.5 tsbp Kerrygold
8 medjool dates – chopped
2 large yellow (not green, not browning) organic bananas
2 heaped tbsp mascarpone cheese
1 tbsp organic double cream
½ tsp Green and Blacks pure cocoa powder
If you’re avoiding dairy you could try coconut cream on top or coconut frozen yogurt, just add at the last minute and serve immediately.
Melt the Kerrygold, add to the almond flour and stir until combined. Use the back of a spoon to push down the almond flour to create your biscuit base in the pie dish.
Leave in the freezer for about 20 minutes or until firm.
Add dates to a saucepan, add in a few splashes of water and simmer on a low heat whilst stirring. As the water is absorbed, add in a little more water because you want the dates to form a thick but moveable paste. Take off the heat and leave to the side to cool slightly.
Add the mascarpone to a bowl, pour in the cream and stir. If the mixture is too thick then add a tiny bit more cream or a little Jersey milk to thin it out.
Take the base out of the freezer, spoon on the date toffee sauce and slice the banana on top ensuring all the base is covered. Now spoon the mascarpone mix on top of the bananas and spread evenly. Sieve the cocoa powder on top and serve.
If you leave it a little longer in the fridge before serving all the flavours come together a bit more. Consume within 24 hours though.
