Homemade Mince Pies Recipe

There’s nothing quite like the taste of homemade mince pies at Christmas, especially when they’re accompanied by festive biscuits and tea.

This recipe makes 12 mince pies and 12 biscuits. It is important to only make these when there’s many people to eat them otherwise it’s just too tempting to allow yourself one too many!

BWFP Homemade Mince Pies Recipe

Prep to plate: 35 minutes


375g Organic plain flour (extra for rolling)

250g Kerrygold unsalted butter (diced and chilled)

30g Billigton’s Golden unrefined icing sugar

4 to 5 level dessert spoons of cold water

12 heaped teaspoons of mincemeat for each pie (high quality – we use Waitrose own)

1 tablespoon brandy


Preheat the oven to 200c/400f/Gas 6

Cut up the butter, place on a plate in the fridge to keep chilled

Sieve the flour and caster sugar into a large bowl

Place the mincemeat into a bowl and add in the brandy and stir well – set aside

Add the chilled butter to the flour and with your (cold) finger tips rub in the butter to the flour nice and quickly until you have a texture like fine breadcrumbs

Slowly add in 2 dessert spoons of water and use your hands to combine, slowly add in the other water until the pastry forms into a smooth, dry ball.

Spread a little butter over the inside of your mince pie tray

Flour the surface

Use a floured rolling pin to roll out the pastry until it’s about the thickness of a pound coin all over

Use a 78mm pastry cutter to cut out your 12 bottoms, place them into each pie well and fill each one with the mincemeat

Use a 68mm pastry cutter to cut out 12 tops and place each one on top pressing down the sides a little so they form a seal

Place in the oven and cook for around 20/25 minutes or until just turning golden

Leave to cool on a wire rack and sprinkle with fairy dust (aka: icing sugar) or serve immediately with a dollop of Jersey cream

Now for the spiced chocolate biscuits…


2 tsp honey

1 tsp ground ginger

1 tsp ground cinnamon

2 tsp pure cocoa powder (Green and Blacks)


**If you have mini people then this is a good one for them to get involved in**

Line a baking sheet with baking parchment

Combine the pastry back into a ball and roll back out into a sheet

Drizzle on the honey and spread across the pastry

Sprinkle on the ginger, cinnamon and cocoa powder

Roll up the pastry, fold over each side and keep folding and pressing down creating a marbled effect

Re-flour and roll back out into a sheet

Use a 58mm pastry cutter to cut out the biscuits (unless you have a festive one) and lay them out onto the baking parchment

Stab each one in the centre with a fork

Cook on 200c/400f/Gas 6 for around 10 to 15 minutes, turning over once

Leave on wire rack to cool and sprinkle with fairy dust
Serve with a mug of Clipper green tea with cranberry.
