Today we’d like to share with you one of our favourite sweet treat recipes which we throw together when we have friends over or we’re just in the need for a cookie (or two!).
The best chocolate chips are Sainsbury’s Taste the Difference 70% but if you can’t get those then please just crush up some Green and Blacks 70% because the alternatives are really poor quality and contain crazy amounts of sugar.
Almond Flour Chocolate Chip Cookies
Makes: 8 large cookies or 12 smaller ones
Prep: 5 minutes
Cook: 10 to 15 minutes
Cool: 20 to 30 minutes
Ingredients:
100g ground almond flour
100g Doves Farm Gluten Free Self Raising Flour (or organic self raising if prefer not GF)
½ teaspoon baking soda
½ cup melted Kerrygold butter
¼ cup Billingtons golden granulated sugar
2 large egg whites whisked (lose the yolks)
1 teaspoon vanilla extract
½ cup dried blueberries
½ cup chocolate chips or smashed up 70% Green and Blacks
Instructions:
Place all ingredients in a food processor or bowl and mix well until all combined
Scoop dough one tablespoon at a time onto a parchment lined baking sheet
Press balls of dough down so they are very flat, wetting your hand if the dough is sticky
Bake at 170 for 15-20 minutes turning once or twice.
Allow to cool for up to 30 minutes so they go crispy.
Serve with a large mug of organic coffee or proper tea.
Don’t keep them all to yourself because they are calorie dense!
